Cognac and Armagnac, prestigious and appreciated distillates in the world
French brandy is recognized worldwide for its refinement, quality and fidelity to traditional production methods, especially in the prestigious regions of Cognac and Armagnac. It can only bear these names if it comes from those specific areas of France, complying with strict regulations on the grape varieties used and the production processes.
Distillation:
Cognac undergoes a double distillation in copper stills, which gives it a smooth, velvety texture. It must be aged for at least two years, although high-end products exceed this time by far. As for Armagnac, it is usually distilled only once in continuous stills, resulting in a more robust, complex and rustic profile.
Both are aged in French oak barrels, which add elegance and subtle nuances without masking the natural expression of the distillate, unlike American oak.
Sensory profiles:
Cognac stands out for its notes of dried fruits, mild spices and a refined woody background.
Armagnac reveals aromas of plum, apricot, vanilla and a more intense and persistent mouthfeel.
Both types of brandy preserve the balance between fruit and wood, showing hints of coconut, vanilla and ripe grapes, thanks to the subtle use of French oak. French brandy is aged statically, allowing a controlled, homogeneous and precise evolution.
